The signs go Fire-Earth-Air-Water x3 around the zodiac. They also have a quality, Cardinal, Fixed or Mutable, which go CFM-CFM-CFM-CFM. So Aries is Cardinal Fire, Taurus is Fixed Earth, Gemini is Mutable Air, Cancer is Cardinal Water and so on. Aquarius is Fixed Water.

The names of each sign are just customary, they are really arbitrary 30 degree divisions of the zodiac. I mean it's nice that Pisces (fish) and Cancer (crab) are water, but so is Scorpio (scorpion). A ram is fire and a bull is earth. A set of scales is air. And so on.
