Sartharion is male. All flights have different surfixes on their names that determines their gender. strasz/strasza for Reds, ormu/ormi for Bronzes (exception being Chromie, who may or may not be female with a male surfix), gos/gosa for Blues, us/ra (iirc) for Greens and n/a for Blacks.
LoL no way, that's actually pretty cool to know I don't know why but I always assumed Sarth was a chick, hell even the tactics page on Wowhead refers to sarth as 'Her' cool, guess you learn something new every day and this one is definatly doing in the 'useless but cool' section, to be dropped next time the info is appropriate, so I can sound all knowledgable and awesome
