Every 7 attacks (iirc) she gets a headshot. The Hurricane bolts add towards those 7, making it stack up much faster.

Yes, but that Headshot might be used on a secondary target(Hurricane bolts both give stacks and consume the buff, or at least it felt like it), essentially wasting the Headshot(if it goes on a tank or minion).

I'd do more ranked, but honestly, I know how terrible it is to do it at the wrong times. And at the right times, I end up procrastinating until it's too late.

I like playing normal draft due to the simple fact that no one is really upset if you lose.

What kind of runes/masteries would you recommend for Kayle jungle?
Double penetration(yes, I just called it that, deal with it) or just a standard AD or AP offense mastery page? MS quints, armor yellows, MR/level glyphs and which reds? And for items, AD or AP? I'd assume Elder Lizard + Nashor's + maybe Liandry's?(based on those items, I'd assume a full AP mastery page would be best)

Personally I love Udyr and Malphite, but Udyr is not really that viable in his current state, and Malphite is just sooooo slooooow in the jungle.
I rarely play top.

Diamond has used Udyr on several occassions, I'd say he's perfectly viable.

Obviously people like Diamond can make him work, but to be honest, there's really no reason to play a champion with drawbacks such as Udyr's, when you can just pick someone who doesn't have those problems.

Then why is Teemo viable for normal people, but not Diamond-level people?

And there's also picks like Poppy that aren't viable for either.

Because "non-normal" people know how to deal with him a lot better than normal people do. Not to mention Teemo has an extremely low team-fighting presence, but is a lot better when you pick off solo people.

The world of the "non-normal" people is entirely different. It's why you see champs like Twisted Fate work so much better at higher rankings than lower ones.
