name one thing in this video which is exploiting. sure, he stacks stuff and handpicks the mobs to follow him. but nothing is impossible to recreate for everyone since it is all game and all legit.

TBH the default UI is quite good and functional for the vast, vast majority of people if you ask me, you don't need fancy ones to do well. Our GM raid leads and has top parses, and he only has a nameplate mod. I more or less do the same, I'm nowhere as good as him but I find most UI mods an eyesore and always end up going back to vanilla which never hampers my performance in any tangible way.

UI mods appeal to people who think that stacking a dozen weakauras on top of each other and completely blocking all view of the raid environment will somehow make them dps better.
