Even though I see your point I think we can look at this matter from a perspective utterly involved with the lore and simply look at Blizzard's usual modus operandi. In this specific case, Blizzard seems to have spent too much effort into making Bwonsamdi look like a "menacing yet funny" kind of dude, that questionable guy that despite everything always ends up on your side, which is the exact opposite of Helya who was not just blatantly antagonistic but a pretty insufferable bitch on top of that.
Entirely possible that his boss is a yet to be shown character. He's older than the Trolls who are the first Azerothian natives. He predates the Titans and thus Helya. He only takes on the Troll form because he wants to.
Remember that Odyn is really the only one that we know of that has peeked behind the curtain, and maybe Gorak Tul. It's not unreasonable to think Bwonsamdi's "boss" and his entire character are a lead in for a future expansion with a new character given this expansion is set around Old Gods.
Shower Thought: N'zoth has corrupted the "Natural" Life & Death cycle via Death deities like Bwonsamdi, the souls of the dead under those deity's care will be eventually consumed by the Old God to boost his power, until eventually he's strong enough to break out the prison by himself. In exchange, N'zoth destroyed all other Death deities, letting Bwonsamdi reign supreme in the Realm of Death.
"The nearness of the Void here is comforting. I was used in a sacrifice of many creatures in a place like this. Every death brought us closer to the complete corruption of this world."
This way, N'zoth make certain that no matter what happens, he wins. Deathwing obliterated? The untold amount of death he caused empowered N'zoth. Mortal hero thwarted Azshara? Her soul is powerful and delicious. Casualty from HvA? Yum!
And this may actually be the reason why Void is scared of Sylvanas. If she raises everyone into Undeath, the Life & Death cycle will be broken and there won't be anymore souls of Old God to consume.
I like this, i like this very much. It would make sense for once.
The only question is how Sylvanas approaches the undeath thing. Does she raise them while maintaining their souls?
On the Siege of Lordaeron, when she kills alliance and horde, she seemed to raise them as mindless undead, bound to her will, thus no soul. LK did the same with his scourge. If that is the case, all the souls still go to Death realm and maybe N'zoth (if he is behind it)
What if the soul Bwon lost is Sylvanas? that means she might know N'zoth plan, and that he is behind Bwom? but that will raise the question: why not share the info with everyone, and you know .. stop the war and stop N'zoth from consuming more and more souls.
But the ultimate goal of the old gods is to awaken Azeroth under their corruption thus allowing the void to have a physical manifestation in the universe. If N'zoth is behind the Death realm, then why not just kill Azeroth and take her soul (assuming titans have such thing). I'm sure 10.000 years of having Azshara as a tool could have accomplish that.

He and Mueh'zala are both mentioned on the same tablet.

Seen, yes. Mentioned, no. They've been on the Tablet of Theka in Zul'Farrak since vanilla along with Shadra, whose avatar did appear in the Hinterlands and had a high priestess in Zul'Gurub as well. Kimbul and Mueh'zala were absent in all other lore or in-game until the Traveler book earlier this year and now Kimbul appeared in BfA too. Makes sense that Mueh'zala would make an appearance as well.
It's even more suspect because if they wanted to use a tiger loa they coudl've just as easily used Shirvallah. Instead they picked Kimbul.
The Tablet of Theka was always rather vague - referring to "Ueetay no Mueh'zala" and "Eraka no Kimbul," making a lot of people believe that Ueetay and Eraka were possible Loa spirits as well, and that "Muel'zala" and "Kimbul" were descriptors or honorifics. Shadra has the same issue with some referring to her as "Elortha" based on the nearby tablet (at least until Shadra appeared in person as it were).
Mueh'zala is notable by his (or its) complete absence in BfA - no altars, no shrines (except a minor and unadorned one in Tal'farrak), and no real mention either.

That could've been many things - from a being from the Void, to a manifestation of the Old Gods, or Mueh'zala. It is interesting because I've always felt that Odyn must've been influenced or partially corrupted by something to make him do what he did with Helya and the Val'kyr.
