You're missing some nutrients that you can get from leafy greens. Rice and beans are fully sustainable in the long term as a protein/carb source, although you'll most likely get bored of it if you're not creative with sauces/spices/mix-ins.

if the TV show im a celebrity get me out of here has taught us anything, it's that people will do almost anything to eat something other than rice and beans.
The answer is potatoes. It's missing potatoes, and potatoes are the greatest food on the planet.

Rice and beans on their own sound very dry and bland, if we could add something juicy to it then sure.
I am not an advocate for rice, rice has measurable levels of arsenic and are highest among rice grown in parts of Asia and the Southern US. It has a lot to do with pesticides used in those regions which has had a long lasting effect on soil quality. Rice is very good at absorbing nutrients in the soil, which is why this is a problem for rice specifically.
