Actually I am very picky about cheese, some cheeses are good for melting and some should only be eaten cold. Cheddar isn't a good melting cheese (unless it's melted into a sauce to make mac & cheese but that is an entirely different thing). Also ALL cheeses are processed, without the process they'd still be milk

That's all I can think of off the top of my head. No blue cheeses because they make me suffocate. Never been able to actually eat any blue cheese because my throat ceases up.
