Cap is level 120 and everything resets, so you kinda have a new "season" weapon, with new transmog and talents.
OR;
Epic story line, where we have to melt our weapons by the end(destroying them), in order to defeat the Legion and get it replaced by something less lore wise important.
Easy.

This. They've said they're waiting to see how artifacts play out before making a final decision on what to do with them, but they've ballparked a couple ideas (most notably, letting us use appearances we've unlocked during Legion's lifetime as transmogrification choices in the future, like the legendary cloak, that players who join after Legion can't unlock for transmog).
To the OP: The general fan consensus I've seen is that we'll probably use up most of our artifact's in-lore power in the final raid against the Avatar of Sargeras or whomever else ends up being the final boss, then retire them as they've served their purpose as weapons and now serve a stronger purpose as a symbol of our order. That way, Blizz can build on the alternate-advancement system they provide in a more organic way, tied to the character rather than the weapon, and go back to getting new weapon drops.

In game they will probably just bake all the artifact traits back into the baseline of your class along with whatever inevitable changes they make to every spec again. Lore excuse, easy we either sacrifice the power of our artifacts and thus make them no longer special or we get EVEN MORE POWERFUL ARTIFACTS!! (like det said maybe we get special void weapons)
How is this even a question? How has blizz treated every item and everything from last expansions? They have ignored them and acted like it never exsisted. Doesn't the game have a glut of legendary weapons and items just gathering dust already? How is ones farm from panda land treated? Look how they already have treated the garrisons. We will move on to the next thing leaving the past item behind. If lucky maybe we can at least transmog into the look at best.
Hmm, if they want to continue with the artifact weapons after Legion they could just simply make it so that when a new player starts, they get their artifact weapon through a quest of some sort at 100, and while leveling to the new cap they unlock all the artifact talents and perks (catchup system) so they are on par with everyone else when at the new lvling cap. The weapon could just scale with level too.
You are assuming there is another expansion after Legion...
Next expansion we craft even more powerful Artifacts! Or something.
Simple. In the prepatch for 8.0 there'll be a putting-away of weapons thing happening where you'll be given a replacement epic with great thanks from a respectful faction leader, and you'll turn in the artifact for the betterment of all.
Then blammo, Next Big Threat(TM) will show itself and attack.
When the war is over you dont keep driving down the road in a panzer tank do you?
Our weapons of mass destruction will be locked away until such a time where they are needed once again.
Which is essentially going to be immediately after the legion xpac but pfft who knows, maybe we will stumble upon even more powerful weapons by then

Also yeah just to add more on topic, They will probably have no problem making new artifacts for the most part. Most of the artifacts are completely new items just invented for legion. Admittedly some of them are gonna be awkward to replace like ashbringer. But there are also still other mythical weapons (inb4 mythic weapons next expac) that we havnt wielded yet.
It is a fair assumption. Very likely I would even say,
OT: They have said that the artifacts are Legion material, and hinted that they won't be used in future expansions. It does indeed seem likely we will somehow render them useless or pass them on.
My guess is that they have some ideas already if it has not already been decided
