Not having the Highmountain paragon box be an eagle will always confound me since we have plenty of moose. The leatherworking one I believe can be mounted by non-LW.

Are there lots of mounts in game? Yes. But for many it's not about quantity but about wanting a specific one that they find awesome and it doesn't make sense you can't get it. Biggest ones in Legion I'd say are the Eagle mount, Nightmare Drake and the Arcane crow you fly down to the broken shore in the scenario.

The bat mount from ZG, we've had models for bat mounts in game for years, but the only mount is the one from the store. Not counting the troll druid flight form, because hideous facial tusks.

More directly on topic: armored Direhorns like Horridon, Thunder Lizards, a standard colored Rylak (why did we get a chromatic one?), other Quilen, new model raptor that's not a PvP mount, a crab mount.
