Cholula all the way. So so good. I keep it in the fridge, but it doesn't have to be. As a vegetarian I need to squeeze out all the taste veggies give me. I use it on literally everything. Also, nutritional yeast flakes are awesome too.
Edit: I've heard it obviously tastes great on meat as well.

i mostly go for sriracha.. it's fairly cheap and come in bigger bottles so that's nice.

I had fun once, it was terrible.
I used to put Tabasco sauce on a lot of stuff as a kid... I haven't had any in years, though, no idea why I stopped.
We have a few bushes at ny grandparents house in Florida that grow our own peppers. We cut those peppers up into our food sometimes, but we also grind it up with some other stuff to make our own pepper sauce.
I hate buying sauce bottles from the store, they always end up being salty.

Well, I have a bottle of Poppamies Scorpion in my fridge right now. Scovilles are around 350-400K I believe. I feel like a lot of the the "hot" sauces listed in this thread are anything but hot.
I think we had a thread earlier this year on this very topic that you might want to read, I don't think the refrigerated question was asked, but I know a lot of different sauces were thrown around.
