Sriracha, sweet chili sauce, and a tabasco-alike variant, all homemade (still working on the last one, it needs a bit more kick).
Cholula for sure. Just so tasty. Original is my favorite but the others are good on certain things. I usually get the pack of all of them but have to replace the original 3 or so times before even thinking of the others.
i don't really have a go to hot sauce. as long as its not siracha.
i usually refrigerate it.
i only put it on stuff that i think tastes good with hot sauce.

I really like sriracha, it's my go-to for most things. If I'm looking for something a little more vinegary I'll go regular cholula or tapatio.

My friends dad bought some of their Insanity Sauce one year at a hot sauce specialty store in Nevada... It was an insane level of heat all right. He made a 8(!) quart stockpot filled with chili and I shit you not, only put in 4 drops of that sauce into that whole huge pot... The chili was still hot enough that you needed a piece of bread and some milk to eat it and not feel like death.

Cholula is the correct answer for general-purpose hot sauce. Some other points:
- Frank's Red Hot is fine for making Buffalo wing sauce, seasoning french fries, or generally adding a salty, weak heat to things. It is otherwise worthless.
- Sriracha is OK but standard chili-garlic sauce is strictly better in all situations, albeit typically more expensive by volume
- None of these things are really above a 3/10 on any respectable heat scale, so if you want real heat, look elsewhere (e.g. ghost pepper)
- Refrigerating hot sauce is a pointless waste of energy
- Putting hot sauce on everything is as good an idea as putting ketchup on everything, which is to say it's a great idea if you have bad taste.
If it says to you do, if not don't. Now if the label is in a language you don't speak better to be safe then sorry and toss it in the fridge. If nothing else pay attention when you eat out if they leave it out so can you. It is extremely rare that these sorts of things can spoil or turn based on the vinegar and/or salt content they normally have in them.
That is my favorite. Finding it in a bigger bottle can be a bit tricky though.

Sriracha is my go to for cooking due to flavor, sometimes gochujang or la ya/japanese chili oil depending.
Cholula is the hot sauce that add on top typically
I love hot foods, but I am severely allergic to ghost and scorpion peppers. I had a dish with one pepper per 25L and started going anaphylactic.
lol, I never understood people who think it "cool" or something to eat the hottest sauce they can find. It's like the equivalent of stabbing yourself in the hand for fun, while simultaneously thinking you're awesome for doing it. I like stuff with flavor, not "I genetically engineered a pepper to be made of liquid fire, and then I ate it!"
No taste, just heat. Bleh.
At that point, why not just buy some of this and be done with it.
