I feel like I just read a post written by myself.
Xenogears is still to this day my favorite game of all time. I would kill for a remaster, remake, or insert anything with this. Legend of the Dragoon is easily in my top 10, probably top 5, and maybe even top 3.
I've actually never played any of the DS series except 3/BB/KF2/KFTAC and loved all incredibly. I was nervous that playing those would make it harder to appreciate the older Dark and Demons Souls though. While gfx tend not to be a huge piece to me, a lot of the gameplay improvements from the newer games would likely be sorely missed (if applicable).
My third game would probably be Legend of Legaia. Some of my other notable pics already have remasters done, or are in the works (dot hack gu, VP, FF7, Grandia II, etc.).

According to them they added: a new adventure, a couple of new characters, native support for widescreen resolutions, "400 improvements to the original game" (no idea what that means) and improved multiplayer support with connectivity between all platforms. I'll admit I have not played the originals in many, many years so I may be oblivious to some changes but so far, I have yet to notice anything particularly out of place. I suppose if you still have the original games and can play them fine then there is no reason to buy these.
