I think the cleanliness was mostly due to the competent staff, I seriously doubt either of those two ever worked to keep the place clean. And organized? When you only have one guy working the computer system, that's not organized.
It's clean as all hell, which is surprising. Once worked in a casino resturant that had mold on the floor and grime everywhere, don't even get me started about he warmer months when there were dead flies on everything. But that was really the only positive point that was readily seen, besides the cake which were gotten from a store.
Besides that, the only staged part that is more clear is the customers sending back dishes. The server does mention that it's not a normal occurance, which probably means they did it simply to get the cameras on them for a second or were told to. But the fod Gordon ate did have problems, so it's a better chance that not many people complained a lot.
That's how nearly all of the episodes work. Far too many dishes are sent back when the cameras are rolling, far too many to keep the place in business if it was a regular thing. Some of the food Gordon tries is also a bit nitpicky. He rarely ever likes anything he eats, while half the time the food doesn't seem to look as bad as he says it is. Then again, I don't fine dine that often and I'm not an accomplished chef like he is.
