I'd go with mage. free AC, conjuring food and drinks and don't forget the fast travel options. Oh and... also very hard to get a hold of if they don't wish it (short range teleportation and slowing their own decent so they can fall with style AKA FLY!!!!

If i keep the supernatural powers: probably druid or shaman so i can heal myself and control life to make me live longer, their magic is symbiotic so as long as im not to selfish i can keep using it. probably not priest/paladin as that magic is faith based, so sufficient mental trauma could make me loose the ability to use it. Maybe a mage if i was good enough and they can do what they can in lore, not just ingame.

If i cant keep the supernatural powers: rogue is probably the most practical skillset in todays world, sneaking/stealing has actual benefit. Being a good hunter/warrior/monk is only really good if you wanna win the olympics.

fun fact: you don't have a life span when you are dead. the loss of emotions and senses that comes with undead is totally not worth it.

and if you were a DK, you would just be imprisoned/destroyed for the abomination you were. Other classes you can hide your weirdness at least and not be shunned.

Well you could summon totems, ghost wolves to attach your enemies while it heals you, and do that stupid thunderstorm and blow some Innocent DeathKnighr off a bridge into oblivious because the Alliance can never, ever attack the freaking healer and...
