It's the best genre, mix it up with comedy and you get some of my all time favorite shows.

I think people have huge misunderstandings about SoL's though, they look at moeblobs show's and instantly think it's a SoL, instead they should be looking at shows like Gin No Saji.

It's why I cut it into 2-3 parts, comedy, serious, and purely "SoL" where there ends up being no actual plot

comedy would include things like KONOSUBA, serious like you said gin no saji and hanasaku iroha.

Pretty much, i personally love "pure" SoL's aswell.
You could say Non Non Biyori is pretty close to being that, a pure SoL, but it goes into comedy alot.
It's easily for me one of my all time favorite shows, it's comfortable to watch, it makes me happy.

I feel it's usually more the other way around: people who watch zero first become disappointed by SN since the story is split into 3 routes that still haven't been adapted well yet

I think why I was disappointed with SN had more to do with the fact that what we did see was mediocre to average at best and the characters were awful, than it being split up.

What do people think about slice of life anime? The idea of it seems so boring to me personally, who would want to watch a show about lemons?

You're watching the wrong kind of SoL. While a lot of it is moe blob shit, you also have substantial and meaningful SoL like Hanasaku Iroha, Barakamon, Silver Spoon, Genshiken, Usagi Drop and a lot more. When done well it's probably one of my favorite genres of the medium.
