Garrisons are ok, but having Garrisons be so central to the expansion was not ok.

Sunsong had the original ideas for what was actually fun, namely having a piece of land in the world that 'was yours' that you watched evolve through your actions over time. It was really useful if you wanted it to be, but could be safely ignored if you didn't care at all. A natural evolution of that would have been to increase the amount of customization, perhaps give you a way to have a simulated shop via NPCs and quests. Definitely nothing that inhibited or was required for progress in a general sense.
In this regard, the garrison is an utter failure and it's one of the worst things they've ever put in the game.

I like the Garrison better, although there are some major issues that need to be addressed moving forward with it.
Farm was atleast 100% optional and players were able to never even come across that quest, and they atleast helped professions instead of destroying them. Garrisons did a lot more wrong then good, the actual feature could've been fun if it weren't for isolating everyone into their own small world and not fully turning the game into a Facebook cow-clicking game. A lot of potential being flushed down the drain, I still would've loved that Alliance garrison in Talador which got scrapped.

The Sunsong ranch COMPLIMENTED professions in a fun and cool way in my experience.
Garrisons almost completely replaced meaningful player contribution toward working your professions mostly because of the easy access to the herb garden and mine coupled with the totally unfun reagent cooldown. It was the epitome of anti-climatic. At least that's what my take is what people mean when they say "garrisons completely destroyed professions."
Ask a non-orc horde player and they'll most likely say the Ranch was better.
I rather like Garrisons for the nod to the game's RTS history, but I found the quest chains to be clunky the first time around and increasingly annoying on subsequent characters. How many times can one really stand grinding some of those areas? Didn't get enough of Darktide Roost as part of the Garrison campaign? You can have more of it for Apexis Crystals! Multiply that by your number of alts. No, I don't *have* to do it, but that means taking a pretty good hit by not getting the legendary follower on those alts. Oh, joy, and Harrison is just about as annoying.
With COVID-19 making its impact on our lives, I have decided that I shall hang in there for my remaining days, skip some meals, try to get children to experiment with making henna patterns on their skin, and plant some trees. You know -- live, fast, dye young, and leave a pretty copse. I feel like I may not have that quite right.
The ranch was better. You didn't have to do it, it complimented professions instead of replacing them, and it didn't feel like a chore whenever you did it.
That being said, I wish there was a tiny bit more content added to the ranch, and the reputation grinds didn't take so long.
I thought they both sucked, but the farm was better considering how much more optional it was.

Sunsong Ranch was optional so it was better. It also didn't destroy many aspects of the game.
Hard to say. I loved that the Ranch took not that much time per character and yielded some materials after reaching exalted. It also nicely supplemented cooking - most of my characters which have reached level 90 also have maxed out cooking. Now, I have this only on my main...
Anyway, Garrison has some nice perks, but takes way too much time per character - especially herb garden & mine.
Hey, what happened to all those people that insisted the garrison wasn't mandatory? Are they enjoying the mandatory content so much they can't comment any more?
I kept telling everyone during beta, hell, since the opening announcement this was going to be the worst expansion ever. I unsubbed at launch, but from what it looks like WoD is even worse than I thought it would be.
