I've never been Shadow at level 80, but I've been collecting offspec gear from my guild that others didn't need, so I will level as Shadow, though I'll still do the occasional instance as Disc.

Shaman - Elemental for grinding and heals for instances. Only need 1 set of gear to do both and free's up the bag space since I can use the same set for both!

Balance for questing since all I have is Resto gear (gogo 27% hit!)
Resto for dungeons
Grabbing all leather and usable weapons on quest turns ins to speed them up and then sort it all out at 85 as to what I want my offspec to be. Resto will stay main.
