Only now you realised this, did you not play the expansion? It was fairly obvious Grom was not going to be the final boss if you followed the storyline, especially the legendary quest. Archimonde is the end boss of the expansion, enjoy.

Orcs have been the main protagonist for the entire expansion up until tanaan. The expansion is titled "Warlords of Draenor" Yes, there were legion influences during the game but that was because of Gul'dan, who was built up as the ultimate bad guy. It would have been a lot more interesting to have Gul'dan as the last boss. Possibly to stop him from breaking Draenor like his MU counterpart did.
At this point, is not obviously that Archimonde is the last boss of the expansion?
If they wanted Grom as the end boss he would of drank the smokey mountain dew.
And 'demons are a surprise' is what people say who don't allow facts to alter the narrative they build up in their heads. The demon stuff was prevalent throught the leveling zones and appeared in dungeons as well. Not only did you have a huge infestation in Talador but there was also the corruption of Gordawg in Nagrand that caused all the elements to go to war with one another as there was no longer a balance which was one of Gul'dans plans to destroy Draenor, then there was the content in Nagrand where they fight over the power of a dark star. The dungeon that ends with Teron-gore, ect. The entire purpose of Highmaul was to stop the Ogres from giving the Iron Horde magical immunity which included demon magics. Shadowmoon Valley has tons of Sargerei content. Socrethar, the daily zone where the Legion is attacking the city of Shattrath. Lots of demon content.
So no the demon content isn't out of no where and it was entirely planned into the path of the lore. I'm personally not tired of killing orcs but I am tired of getting horde transmogs when I want some alliance transmogs.

Blizzard realized that killing your villains shortens your lore potential, so Gul'Dan got away to further the story in the future. Even the Liche King went undefeated for WC3, Frozen Throne, Warcraft, and BC before he was finally dealt with. Nothing wrong with letting a villain live to fight again another day.
And Gul'Dan didn't break Draenor, that was because of Ner'Zul who opened thousands of portals at once which ripped the planet asunder and left it floating in the twisting nether as what Outland is today.

It's still not "suddenly" as you claimed. I don't really see why the title of the expansion should lead to the endboss being an orc. Either way the events are still heavily influenced by Gul'dan/the Warlords. Kil'rogg is a Boss in HFC after accepting the demon-blood + Grom & Gul'dan are both featured in the conclusion of 6.2.

Arguably, WoD they've been doing things differently with employing many more cinematics into the entire expansion.
But having a cinematic at the end of the "final boss" of a raid normally points to "Whelp, that was it. Expansion over."
Idk. This entire expansion they've been doing things differently. We might have another raid in store.

I am sorry but we did not kill any fucking Hellscream, ever. We watched Thrall kill him. Just like we watched him kill Deathwing too.Players had just finished a raid zone full of Orcs and had killed another Hellscream.
The way that quote/paraphrase reads it sounds like they were trying two tiers from the start, and we suspected as much from the wording of that old Chilton interview.
I'm torn on this. On one hand, I would have liked to have seen a demonic Hellscream with wings and horns, perhaps an Illidan style fight. I think that would have been different enough from Garrosh to be acceptable. However, it is cool to get something unexpected, though Archimonde feels a bit shoe-horned in due to the lack of build up.
In terms of raiding though, we 'killed' him. What happens in questing or cutscenes is irrelevant, the point is that we'd have 2 expansions in a row whereby the last boss would be an Orc, and a Hellscream at that. They wanted variation I guess, as there are plenty of other Orc boss encounters in WoD.
To those saying Gul'Dan was sent to another realm: No.
He was, in all likelyhood, sent off to Argus. Former homeworld of the Dreanei and currently the Legions biggest stronghold. If anything it's giving us hints that we may be going there soon...

Alright thats a bit facetious, I do take your point. But teasing and having over half the expansions narrative lead up to a battle with Grom, only for him to be best buds with Doratan and Yriel in the cutscene is so underwhelming.
So would have been killing him. He wasn't that big of a threat, nor much more dangerous than the average trash mob. Garrosh was Old God empowered, the point of having a 'new' Grommash was not to show him drinking the demon blood, him drinking it would have been just as boring.
There was really no 'win' situation with such a convoluted expansion. In the end, we're fighting the Legion, which will probably be the main threat of the next expansion. So we went from orcs (5.4) to Legion (7.0) which could have been done in a cinematic, but it has taken us two years and an underwhelming expansion instead.
The only two things we get from Draenor are Gul'dan, who could have been brought back some other way (the half-demon thing) and who might get killed early next expansion just like Garrosh, and Yrel, who could have just showed up as an Exodar survivor who was too young to join our adventures until now.
It wasn't worth it.
