Those aren't normal placeholders. "Placeholders" are meant to be simple, existing assets that you can drop into the game until you come up with something refined to put in its place.
A centaur placeholder would be a generic centaur from pre-cataclysm so that a new one with cataclysm artwork can be dropped in later. Making a custom model by arranging humans in weird ways would take more time than it's worth for a placeholder item. Most likely one of the designers was bored or wanted to drop an easter egg in there or something.
Or those creatures are going to be a new mob type that we dont know about so they dropped in a retarded design that is going to be absolutely nothing like the final thing to keep us confused.

...and yes the Tol'vir will in fact be centaurs (or taurs), with the bottom half a of cat/lion.
The Tol'vir are stone creatures (like the earthen) created by the Titans. They have the the head and bottom half of a cat/lion, and the chest/upper-body of a human.
Could be placed to show a normal human's scale compared to the buildings
Every time I see those things I can't stop myself from laughing out loud. Placeholders or not, it's hilarious. I wonder what's going to be there in retail.
