Sharding is indeed a huge turnoff.
I'll remain positive and think this could be their in game group finder, like how M+ works. I won't have a problem with that as I'd just use an addon like vQueue.
Or that it's just not been removed yet due to oversight.

If blizzard fails to provide an authentic classic experience then you’re going to see a lot of people play private servers. There is a particular project based in EU and Russia that couldn’t care less about threats from a western company. Heck, i’ll get to play with my European friends if that happens. I can’t see blizzard fucking this up, it would make zero sense and little dollars.
No one is mentioning this but gear comparison is also in game, and its the same as in BfA. In my case I made a paladin using a 2hand weapon and on my bag I had a 1hand sword and a shield , when you shift-click on the sword it shows the comparison with my 2h but it also shows the comparison WITH the shield, a pretty cool mechanic that is on BfA but it wasnt in the older versions. Nothing bad to me, it's great!
Bear in mind this is just a DEMO, wait until they officially announce these things before we freak out.
Guess they should have done a better job communicating which features are intended to stay and which features are just still in the build, because they haven't gotten around to remove them yet.
(reminder: this is a modern wow build that got a vanilla face lift, so stuff being there doesn't mean somebody put it in, it just means that it might or might not stay)
My guess is that the /lfr is a case of "oops..forgot to take that out" and the phasing is necessary for the demo and will get removed afterwards. When the game goes live you have people spread all over the world pretty quickly. In the demo literally everyone is in one of two places. That's my hope at least^^

I'm assuming the sharding is a thing they are using to keep the demo actually operable. I don't think any of the QoL things are an issue. It's not super hard core having to manually compare to items or manually loot. And a lot of the interface stuff looks like carry overs from current WoW because they probably don't have a perfect copy of classic lying around.
Sharding and/or dynamic respawns will 100% be a thing, simply because of the launch. If you stick to "classic" servers, you either launch with a lot of server and watch some of them die, or launch with too few and watch people queue for some mobs for hours. So they'll totally add dynamic instances of zones.
