    Made this over the weekend--roasted bone marrow.



    Rub a garlic clove over the marrow, sprinkle salt, pepper, and some rosemary on it, pop in the over for about 20 minutes, et voila!

    Hmmss... but does the texture not put you off?

    It's like cow's tongue: I actually quite like the taste but the texture is a killer. I just can't get past it.

    You can eat it by itself, but it's rather fatty and gelatinous. It's mostly eaten by smearing it on a bit of toasted bread and a small bed of greens or something as simple as mint. That'll help cut the fattiness of the bone marrow.

    I've been kind of boring on that subject for the last week or so. The grocery store here had these on sale for insanely cheap, so I bought a shitload of them (different varieties, so they weren't all the beef/cornbread ones) and have been going through them in the evenings. From what I've seen, these are the best you can get for a "toss it in the microwave" meal.

    Made this over the weekend:



    Fish tagine. Thin disks of potatoes, bell peppers, tomatoes, onions (just for you @Stelio Kontos) with white fish on top, all smothered with chermoula marinade and cooked in a Moroccan tagine.

NY strip--lightly oiled, salt, pepper; sear for three minutes on one side with a pad of butter; flip over, sear for another three minutes with a pad of butter; let rest while I use the residual heat and drippings to saute spinach, mushrooms, and a little bit of red onion. et voila!

    I took a picture of it, but I ended up eating the picture as well because it looked so delicious.
