They don't. That's why the Legion hasn't used them since TBC.
For warlocks, it's an iconic pet.
It's not unusual for the Legion to enslave void creatures, or anything else really. Also, void creatures can be fel-infused, like the boss in HFC. An entire region at Broken Shore was warlocks summoning void creatures to enslave. Voidwalkers specifically, are demons, because they, as a warlock pets, are older than the idea of Void vs Fel, so it's again gameplay clashing with, later written, lore. But to answer the original questoin, it's a "fight fire with fire" mentality, just like how warlocks, using demons, are fighting the Legion.

Void walkers and other void entities can be enslaved, basically taking away from the void, your nemesis, and giving it to yourself. Why wouldn't they want to use them?
the same way warlocks use demons as pets. Enslave them.

demons are made by twisting normal beings with fel/chaos in WoW.
Just like draenei became demons when they joined the burning legion.
It is possible that voidwalkers received fel infusions and became demonic just like some elementals - like fire elementals which were saturated with fel energies turned int green fire and transformed into the demon category.

but, a warlock can use fel magic to enslave them still. you can use fel magic to bind a lot of types of creatures, elementals, people, undead, void aberrations, probably even lightspawn, arcane elementals.
They're classified as "demons" in game for gameplay purposes.
Most demons can be in more than one category but are demons for gameplay purposes.
Felguards are demons, but they're also humanoid. But in game, they are just demons, so that priests cannot mind control them.
Felhounds are demons, but they're also beasts. In game, they are just demons, so that hunters cannot tame them.
Voidwalkers are abberations, but they're demons so that they can be affected by spells that affect demons (banish, enslave demon). So for gameplay purposes, they are demons.
Gameplay creature categories aren't lore.
They aren't demons, they are sort of elementals, but they are categorized in game as demons because they act like if they were (when a warlock has one like a pet). To be honest, voidwalkers should be shadow priest pet, just as lightspawns (their direct opposite) serves to light priests, but people would just rage if locks lost one of the most relevant pets they have since ages. It's just a relic of the past, if voidwalkers had been included this expansion I'm sure they would be aberrations if not elementals.

Voidwalkers arent demons, they are classified as such in game because gameplay reasons.
And they use them because they are useful.
Feel no pain and can be quite destructive.

Blizzard has always said the game comes first before the lore. When you see the Legion using Void creatures in the past or even now and using void stuff, it's really because Blizzard just wants to diversify your enemies up and doesn't care that they're supposed to hate each other more than you.
Kinda like how all Fel, Decay and shadow users go on about darkness and death, yet all 3 of them would try to kill each other and only shadow should talk of darkness, decay should talk of death and fel users should talk of... burning and green light!
Is it really necessary for this same exact thread to pop up every month?
