Rice should be about equal in volume to the stock added.
Do it the quick way and cook the rice in the stock you'll use for the jambalaya. It adds to the dish and makes it faster to make. Beyond that, just keep adding stuff
I made everything before adding the rice. Does this help answer the question? I used pork and sausage and chicken because I dislike shrimp.

Question, do you remember what rice you used? Most recipes call for a long grain rice which is best but often some don't specify (which is just a crime, you cannot just tell people to use rice ffs!)

Btw you could use something other than shrimp for some seafood taste. Squid for instance. I would not use mussels though.
I checked the pictures I took, I do believe I used tomatoes, and I believe I used some super generic long-grain white rice.

Honestly, try it without the tomatoes (the Cajun version). The tastes are sharper.

Anyway on other advice, it's really about the materials used. One thing that is imo important is for even and thick cuts on your vegetables. They will be boiling for a long while and you want them to preserve some texture.
This was right before I added the rice.

We're going to be having chicken with a delicious honey BBQ sauce, corn on the cob and a nice heap of mashed potatoes.

Nice hot meal on a cold Winter's day! ^_^

...Sorry about the picture sizes, I couldn't shrink them. That's Baked Macaroni Pie in the bottom-left corner of the first picture.

I cooked all these myself though. All recently. And yes I do this alot.

    PAPER Plates, which are recyclable.

If you're gonna use disposable plates, paper is at least biodegradable :P

Beef teriyaki from a Japanese restaurant run by Chinese people. Yeah, I was ashamed to order from there, but I was hungry and it was tasty enough.
